Local: Impossible Pizza via The Wedge Pizzeria

So it has been a hot minute since I’ve visited The Wedge Pizzeria. I feel like The Wedge was OKC’s original “cool” pizza joint, but in 2018 you can’t even open up Instagram without hearing about the latest and greatest pizza place that’s soon to open (looking at you, Birra Birra). So much pizza, so little time, and unfortunately an old favorite like The Wedge got pushed to the back of my food-clogged brain.

Not that you need a reason to visit The Wedge, but heads up that they have a new and exciting offering for vegetarians—the Impossible Pizza!

It’s a cheese pizza made with the plant-based “meat” from Impossible Foods, and you can even order a vegan version made with cashew ricotta (or just build your own pizza and add on the Impossible meat). I’ve only tried the Impossible Burger once, but I was not a fan. It tasted and looked too much like real meat, and as a vegetarian who doesn’t like the taste of meat, I couldn’t stomach it. But when The Wedge sent me an Insta message inviting me to try their Impossible Pizza on the house, I decided to give the Impossible product another whirl.

I ordered The Italian Stallion—port wine sundried tomato sauce, house made Italian sausage, fresh mozzarella and fennel—and swapped in the Impossible crumbles for the sausage plus added red onions.

First off, I’ve gotta say that The Wedge has landed on a genius idea here. Impossible products have a lot of potential beyond just burgers, and this restaurant was smart in recognizing that fact. Now for the verdict…I liked it, genuinely! When cooked like a pizza topping, the Impossible patty ends up being quite crunchy and adds great herbilicious flavor. I didn’t think it tasted like meat in this scenario (it could also be that The Wedge prepared it differently than the last place I tried it), and I think it’s a fun, unique option for vegetarian pizza-lovers. The Impossible Pizza is available for a limited time only, so get it while you can!
