Pesto Pasta Salad

Pesto Pasta Salad

Hosted a Father’s Day cookout yesterday and whipped up the absolute BEST Pesto Pasta Salad. ⬇️ Recipe below!

  • 8 oz. rotini, cooked according to package directions

  • 6.5 oz. jar of pesto

  • 8 oz. mozzarella pearls

  • 1/2 c. sundried tomatoes, minced

  • 1/2 red onion, minced

  • 4 oz. shaved Parmesan

  • 2 T. dried parsley

  • Juice from 1 lemon

  • LOTS of freshly ground black pepper

  • Optional: artichoke hearts & toasted pine nuts

Combine everything, allow to chill for 1-2 hours and serve!
