Low-Fat Creamy Broccoli Mushroom Casserole

This casserole is great for breakfast, lunch or dinner! It’s loaded with five eggs and is made extra creamy with coconut milk and cheddar cheese.

Green Veggie Goat Cheese Pasta

So easy. So delicious. The sauce for this pasta is made up of goat cheese, lemon juice, olive oil and tarragon and is absolutely divine.

Grilled Halloumi Sandwich with Curry Slaw

Halloumi is one of my all-time favorite cheeses. It’s perfect on the grill and is absolutely divine in a sandwich!

Four-Cheese Protein Pasta Bake

I bet you never thought that puréed beans, spinach, leeks, garlic, parsley and ricotta could be delicious (or maybe you’ve never even used these six words in the same sentence before, which is fine), but there you’d be wrong. “Tasty” doesn’t even begin to describe this dish; it’s flavorful and filling with tons of added nutrients. You get to savor in the joy of eating pasta without feeling too guilty. It’s a win-win.

French Onion Grilled Cheese

This is seriously the ultimate cold weather comfort meal right here. Creamy veggie-packed soup and a gooey, caramelized, crispy cheese sandwich…I mean, does it get any better than this? The combo of brown-buttered onions and gruyere is just outstanding if I do say so myself.

Broccoli & Peas Mac n’ Cheese

The sauce is a simple combination of butter, evaporated milk, sharp white cheddar and pepper jack cheese; I think the slight spice of the pepper jack pairs perfectly with the creaminess of the rest of the concoction. The shells soak up the sauce and are hella tasty alongside peas and broccoli.

Lentil Meatball Sandwich

This lentil meatball sandwich is topped with hearty tomato sauce and melty, incredible provolone cheese. È delizioso!

There’s no better combo than broccoli + cheese! Add one of my favorite grains, quinoa, plus some eggs and spices, and you’re in for a treat.

Mexican Pizza

Allow me to introduce you to my reimagined, grown-up Mexican Pizza. I could’ve used a giant tortilla here, but I decided to go with whole wheat dough for that classic pizza vibe. The sauce is a mixture of vegetarian refried beans and enchilada sauce, and the whole thing is loaded up with a variety of veggies. Pepper jack cheese adds an extra little kick, and sliced avocado rounds out this smorgasboard of textures. Behold, your new favorite vegetarian “junk food”!

Green Chile Sour Cream Enchiladas

I usually like to keep things pretty healthy here at OKC Veggie, but I’ll be straight with you when I say that these enchiladas are decadent—albeit delicious—as all hell. There’s an ounce of queso fresco in each enchilada, the sauce includes 1 1/2 cups of sour cream, and it’s all topped with melted, broiled Mexican cheese. I used the light versions of these dairy products where possible, but still…best be avoided if you’re lactose intolerant!

Cheesy Veggie Wild Rice Casserole

love a good casserole, especially one that yields a lot so that I’m guaranteed lunch the next day. And with hearty wild rice, melty mozzarella, fresh herbs and green veggies, this Cheesy Veggie Wild Rice Casserole will definitely make you glad that there’s leftovers!

Cheesy Eggs & Caramelized Brussels

Must love Brussels! This honestly seems like a strange dish, but it is hella tasty if you’re into sprouts and eggs. It’s sort of like a hash, but without potatoes (although it would actually be really good with sweet potatoes). The combo of the caramelized onions/mushrooms goes super well with the sprouts, and the cheddar sends the whole thing over the edge. Be sure to serve with a crusty bread to sop up all that egg yolk!
