Top 10 Recipes for World Vegetarian Day: 2020 Edition

Not only is October 1 the start of the most wonderful month of the year, it also happens to be World Vegetarian Day! Last year, I shared my 10 most popular recipes to date in 2019. 2020 has been a dumpster fire of a year, but at least it has produced some great food — below, check out my 10 most popular recipes to date in 2020. You’ll see a few oldies but goodies from last year, as well as some surprising new favorites. Enjoy!

#10 — SOUTHWESTERN TATER TOT CASSEROLE

A decadent favorite landing on the Top 10 list for the first time!

Southwestern Tater Tot Casserole for the win, folks! It may not be the classiest dish in the world, but ohhh man is it tasty. It's loaded with gooey pepper jack cheese, tons of veggies and is topped with crispy tater tots, the pièce de résistance.

#9 — CHEESY SPINACH STUFFED SHELLS WITH VODKA SAUCE

Another newbie on the Top 10 list — and it is so deserving on the honor.

Cheesy Spinach Stuffed Shells, just like mom used to make, but with an adult twist — Vodka Sauce! If you’ve never had vodka sauce before, prepare to be amazed by how much a bit of vodka + cream transforms a classic marinara.

#8 — MUSHROOM ASADA TACOS

This recipe for Mushroom Asada Tacos is making its debut on the Top 10 list, and for good reason!

Meaty marinated portobello mushrooms are the perfect substitute for sliced beef in this reimagined vegan version of Asada Tacos! We prepared the tacos in a non-traditional way by spreading a thin layer of vegan refried beans onto the tortillas before topping them with mushrooms. Crunchy diced yellow onions and fresh cilantro finish off these super simple Mushroom Asada Tacos!

#7 — REE DRUMMOND’S BLACK BEAN BURGERS & CARROT FRIES

This post from last March, shared after I visited Ree Drummond’s ranch, remains quite popular! Even so, it dropped from #4 to #7.

In March 2019, I had the pleasure of visiting Pawhuska, Oklahoma and touring Ree Drummond’s, aka The Pioneer Woman’s, ranch. When I got home, it seemed only right to whip up one of her recipes! These black beans burgers are straightforward and can be gussied up with a variety of tasty toppings.

#6 — GREEN CHILE SOUR CREAM ENCHILADAS

Though it’s a 2018 recipe, this Green Chile Sour Cream Enchilada recipe is making its debut on the 2020 list at a very respectable #6 position!

I usually like to keep things pretty healthy here at OKC Veggie, but I’ll be straight with you when I say that these Green Chile Sour Cream enchiladas are decadent — albeit delicious — as all hell. There’s an ounce of queso fresco in each enchilada, the sauce includes 1 1/2 cups of sour cream, and it’s all topped with melted, broiled Mexican cheese. I used the light versions of these dairy products where possible, but still…best be avoided if you’re lactose intolerant!

#5 — THAI CURRY NAAN PIZZA

Thai Curry Naan Pizza remains one of my all-time favorite recipes, despite the fact it dropped from #3 to #5 in 2020.

Even if you’re not super into Thai food (I personally love it), I think you’ll still like this recipe. It has tons of flavor, lots of veggies and takes about 10-15 minutes (or less) from start to finish to put together. Great dinner option available in a snap!

#4 — PANERA BREAD COPYCAT LENTIL QUINOA BROTH BOWL

This Panera Bread Copycat Lentil Quinoa Broth Bowl recipe took a hit in 2020, dropping from the #1 spot to #4. I blame it on the fact that Panera Bread no longer offers this super delicious dish, thus its decrease in popularity. Even so, this recipe still holds up! It’s slightly spicy, slightly tangy, vegan friendly and a great dish to eat off of for lunch throughout the week.

#3 — EASY HORSERADISH VINAIGRETTE

This Easy Horseradish Vinaigrette is even more popular in 2020 than it was last year, jumping from #6 to #3.

What’s your favorite salad dressing? If I’m at the grocery store, my go-to is usually a light balsamic vinaigrette. If I’m splurging at a restaurant, I’d be hard-pressed to turn down a tangy honey mustard. If I’m whipping up a salad at home, you can guarantee I’m making this easy six-ingredient (not including salt & pepper) horseradish vinaigrette to go with it.

#2 — VEGAN PORTOBELLO POT ROAST

Vegan Portobello Pot Roast held firm in 2020 to maintain its #2 spot.

Vegetarians, generally, get short-changed in the hearty stew department, as people often believe a stew’s not a stew unless it contains chunks of juicy meat. But thank goodness for the versatility of portobello mushrooms and a well-seasoned vegetable broth!

#1 — SPANAKOPITA WITH TZATZIKI DIPPING SAUCE

This recipe jumped from #7 in 2019 to the top spot in 2020!

Spanakopita, or Greek Spinach Pie, is a traditional savory pastry made with spinach (duh), feta, onions, herbs and eggs. My recipe also features a healthy dose of ricotta cheese to make it extra creamy. Break these crispy little triangles out at your next event, and you’re guaranteed to be the bell of the ball.
