10 Recipes with 10 Ingredients or Less

So you’re social distancing, stuck at home and tired of ordering take-out. I hear you. I’ve seen a lot of people stocking up on pantry staples and frozen food — beans, rice, canned soups, pasta, pizzas and burritos as far as the eye can see. Carbo-loading can be fun for a bit, but eventually you’ve got to turn back to real, balanced meals with veggies included.

That’s the thing — when I’ve gone to the store in the last couple of weeks, the produce section seems to be the least picked over. Take advantage of this! Below, I’ve rounded up 10 recipes that can be made with 10 ingredients or less, and I even put together a grocery list to make things super easy for you. All recipes are vegetarian, of course, but I’ve also indicated whether the recipes can be altered to be both vegan and gluten free. You’ll find a lot of comfort food here, but all with a healthy twist!

BROCCOLI CHEDDAR QUESADILLAS

Quesadillas! Who doesn’t love a good quesadilla? They’re cheesy, they’re quick to make and you can eat them with your hands. When combined with sautéed onions, garlic and cheddar cheese, simple roasted broccoli turns into something reminiscent of everybody’s favorite broccoli cheese soup. And slap that mixture in between two tortillas? Solid gold. Click for the recipe

ONE-POT CREAMY CURRY NOODLES WITH BROCCOLI

Bored at home? Take the opportunity to whip up some food that might normally be out of your comfort zone! This One-Pot Creamy Curry Noodles with Broccoli is a dish that proves there is elegance in simplicity. A few veggies, a few spices, humble noodles and some flavorful liquids bring this recipe quickly together. We topped our noodles with shredded carrots and sesame seeds for added crunch, which I think worked out really well. Click for the recipe

OKLAHOMA-STYLE FRIED ONION BURGERS

It’s hard to best a classic Fried Onion Burger! The burger features a hearty black bean patty that’s shallow fried in a pan with olive oil. It ends up super crispy and loaded with delicious onion-y flavors. Garnish with classic burger toppings and prepare to devour! Click for the recipe

ENGLISH MUFFIN PIZZAS

Craving familiar favorites while you’re stuck at home? Go for this adult version of frozen Bagel Bites: English Muffin Pizzas! Use whatever sauce, cheese and toppings you want. BAKED POTATOES WITH CHEESY SPINACH & MUSHROOM SAUCE

Loaded baked potatoes just scream comfort food. The bad part about them, though, is that they’re usually loaded with stuff that’s not so good for you, like fatty bacon, sour cream and a billion pats of butter. ROASTED GARLIC FRITTATA

This is one of my absolute favorite egg-based recipes: Broccolini, Red Pepper & Roasted Garlic Frittata. It makes enough to easily satisfy two people, it’s super simple to put together, and it’s incredibly delicious. Frittatas are great options because they’re low-carb and can be modified to suit a variety of tastes and moods. If broccolini isn’t available, feel free to substitute broccoli that has been chopped into small florets. Click for the recipe

TOMATO BASIL RIGATONI

Tomato + basil is one of the most classic combos in the history of food, in my opinion. Add that combo to cheesy, carby pasta and you seriously can’t go wrong! With easy-to-find ingredients, this Tomato Basil Rigatoni is one of those weeknight meals you’ll turn to again and again. Click for the recipe

LOW-CARB MARGHERITA PIZZA

Margherita pizza is my all-time favorite food, honestly and truly. It’s perfect in its simplicity — flavorful yet light, cheesy yet not too over-the-top. And fresh basil? You can’t beat it. Plus, would you believe you could make a homemade pizza with 10 ingredients or less? I promise you’ll be shocked by the simplicity yet bold flavors in this dish! Click for the recipe

CREAMY CORN CACIO E PEPE

Consider this an amped up version of the classic Cacio e Pepe. Onions, garlic and fresh corn are sautéed with butter and seasoned with salt, pepper and red pepper flakes. A bit of the reserved pasta water is poured into the corn mixture, then an immersion blender goes to work forming a silky sauce. The pasta is tossed in the corn sauce to form a coherent creation, and finally, it’s all topped with fresh mozzarella, chives and additional pepper. The result is slightly sweet, slightly spicy and oh-so-delicious. Click for the recipe

VEGGIE FAJITA SKEWERS

So technically this recipe uses 11 ingredients — we’ll call the white sugar the 11th ingredient, but I’m sure you’re likely to have that on hand! The skewers feature sweet potatoes, red onions and bell peppers, but feel free to mix this up based on your personal preferences. Portobello mushrooms would be a great addition. I’d suggest serving the skewers with grilled corn or your favorite Mexican beans and rice. Click for the recipe
