Do you often find yourself unable to muster the energy to cook dinner? Did you recently plan an elaborate meal, only to order take-out instead? We’ve all been there — some days, cooking just seems like a chore. That’s why planning ahead is so important. In our house, Sundays are for meal planning. When creating our weekly menu, I make sure the majority of the recipes (1) can be whipped up in an hour or less and (2) don’t contain too many ingredients. For me, having too many things to chop is almost a guarantee I won’t follow through with dinner.
